I figured I'd install GNOME and give it a look at, since I've not had a bash with it for so long, and what do ya no, I still don't like it
So here's the question, is it possible to mimic another desktop? What I mean is, can I trick the system to allow it to install and run GNOME Specific apps/tools?

99% of apps designed to run in Gnome will either install/run in Peppermint with no difficulty, or with a small amount of tweaking.

In fact the same can be said for KDE/Xfce apps/tools .. but KDE apps tend to pull in a LOT of dependencies.

Awesome, I'm off to un-install GNOME
Once I've figured out which bits to keep that will work.

If you want to see what was installed when you installed gnome, take a look at the log file at:-
Code:
gedit /var/log/apt/history.log

Now that's handy.

Hmm now I'm curious, is there a log file, for the OS installation as well?

You could take a look at the logs (including the archived tarball) at:-

/var/log/installer

You'll need root permissions to read them though .. and unless you know how to read them, don't expect to be able to make much sense from them. ;)
