How do I add a folder - say documents or home folder - to the bottom menu bar?

That's a good question and one which has a ready response.

Right click anywhere on the panel (not on a task on the task bar, though) and select 'Add/Remove Panel Items', click the Add button and select Directory Menu, and click Add. It appears immediately on your panel. You can edit it, either from the Add/Remove menu by highlighting its entry and clicking edit, or by right clicking on the icon itself and choosing the Settings option. You can select the root folder it will show you, the icon and a label.
